Recipe Ingredients:

  • 40g Grated Parmasan
  • 75g Creme Fraiche
  • 1 x Ciabatta
  • 2tbsp Olive Oil
  • 75ml Water
  • 1 x Carton Finely Chopped Tomatoes
  • 1tbsp Veg Stock Powder
  • 1tbsp Worcester Sauce
  • 50g Red Split Lentils
  • 1tbsp Ground Cinnamon
  • 1tbsp Tomato Puree
  • 2tsps Dried Oregano
  • 2 x Garlic Clove
  • 1 x Green Pepper
  • 1 x Onion
  • 1 x Aubergine

Recipe Instructions: 1. Prep the Veg
Trim the aubergine and slice into approx 1cm thick rounds. Halve, peel and then chop the onion into small pieces. Halve the pepper and discard the core and seeds - then chop into small pieces. Press the garlic or just peel and grate it.
2. "On My Second Whistle, Prepare The Sauce!"
Pre heat your grill to a high temperature. Heat a drizzle of olive oil in your frying pan on a medium heat and add the onion and pepper. Season well with salt and pepper. Stir it up, cooking until soft and golden - should take around 6-7mins. Add the oregano, tomato puree, ground cinnamon and half of the garlic - cook or a further minute.
3. Finish The Sauce
Next, stir in the red lentils, Worcester sauce, stock powder (Veg) and chopped tomatoes - then add the water (see ingredients). Add a pinch of sugar to taste. Stirring, bring to the boil and then lower the heat to medium-low until the lentils are soft, but still have a slight bite to them. 20-25 minutes, this should take. If your sauce gets too dry add a splash of water.
4. Grill dem Aubergines
Meanwhile, lay the sliced Aubergines on a baking tray in a single layer and drizzle with a good glug of Olive Oil - you can season with Salt and Pepper. Grill dem until browned and soft, around 8-9 minutes on each side. Please make sure they don't burn. But, if they are not soft after this time, you can leave them under the grill for a further 2-3 minutes. Take them out of the grill and set aside.
5. Layer it Up!
In a small bowl, mix the remaining garlic with some oil and cut the ciabatta in half. Smear this Garlic Oil on to the cut side of the Ciabatta. When the tomato sauce is ready, transfer the sauce to an oven proof dish, layering the aubergine slices and tomato sauce. Dollop the Creme Fraiche on top and spread out as even as you can across the top.
6. The Finish - You're on the Home Straight!
Sprinkle the a hard Italian style cheese over the Moussaka and season with pepper. Whack it under the grill until the cheese is golden and bubbling - should take around 5-6 mins? Remove the Moussaka from the grill and pop the oiled bread under for 2-3 minutes until golden. Serve in bowls.
